Here's my recipe. I can't keep it in my house when I make it. I double the recipe to make 2 jars! It's a little more expensive to make but WELL worth it!
LETTUCE
One medium sized head of Romaine lettuce, trim across top leaves, chop off bottom throw away outer leaves, wash with cold water in a colander and drain well. Place in a baggie and seal it (otherwise the leaves will wilt) then place in refrigerator to keep nice and crisp and cold until ready to eat! Will last for over a week preparing this way!
CROUTONS
If you're good at it, make your own. I'm not and have found that Rathbury Farms Croutons, with Cheese and Garlic, are the next best things to homemade!
DRESSING
1 cup virgin olive oil (non-fruity flavor)
2 tablespoons white vinegar
1/3 cup of water
1 teaspoon Worchester Sauce
1 tablespoon course black pepper
(I use more pepper)
1 large raw egg
6 anchovey's
Directions
In a blender put all dressing ingredients except cheese and blend on "mix" until liquidfied.
Add 1 container of Parmesan grated cheese and blend until thick and well mixed. Normally requires pushing the cheese down to keep blending as it IS thick!
Makes one large jarge (I pour into empty Parmesan cheese container) plus a tad over (enough for dinner after making it!)
SALAD
Pour some salad dressing into a bowl, add some croutons, and let croutons soak in the dressing for about 10 minutes or more before adding broken up pieces of the Romaine lettuce. Enjoy!!!
Caution
NOTE
A word of caution.....this dressing is so thick, you may have to let stand at room temperature, after refrigeration, before it's soft enough to mix with croutons
I don't ever want to know the calories if you decide to figure it out!
